This Cava is a versatile Brut, ready to be drunk during the most informal aperitifs and enjoy yourself. Fresh and flowing, it demonstrates the great work done by the CVNE winery inside the Roger Goulart estate, specialized in the production of Iberian quarries. The xarel-lo, macabeo and parellada grapes are processed separately, following the principles that govern the production of the Classic Method. After a first fermentation in steel, the must referments in the bottle, and the Cava remains on the lees to refine for a total of 18 months. A classic, round and harmonious label, yet seductively new.
At sight it is announced with a straw yellow color, with some reflections more tending to greenish. The perlage is fine and persistent. The fresh fruit joins the nose with hints of citrus, leaving space on the final olfactory analysis with nuances of pastry and yeasts. In the mouth it is medium bodied, fresh and drinkable thanks to a sip of excellent workmanship, with good length.
